Life happens
I had an impromptu road trip this week taking my daughter back to where she has been living, three hours from us. She needed some extra love, time and support and so I went back with her and then took the train home the next morning. Did you know how reasonable it is to use Amtrak? It cost me only $27 to travel from Raleigh to Charlotte! I would spend more than that on gas! By taking the train, I don’t have the stress of driving and traffic and I get time to write, read, crochet or whatever!
My kids come first and thus I missed finishing this post in order for it to coincide with the podcast. I guess I just contradicted myself because in theory, I could have written it while riding. Yet, I did write a blog about my 18 hour adventure.
My family is my top priority and I try to really live that way to the best of my ability.
I decided 30 minutes before she left to go with her and as I packed an overnight bag, I had my husband put some food together for me. I changed my eating habits this year and have committed to following through at least 75% of the time. My husband was able to put some food together for me to eat on route for dinner and to have for breakfast: turkey, hard boiled egg, apple, goat cheese, and the pumpkin muffins I had made for breakfast earlier that morning. This is the recipe I used, but please take note: I do not recommend using canola oil, instead use butter and/or coconut oil (I used a mix of both to equal 1 cup). We will discuss that further in our upcoming Podcasts with my wonderful friend, Helen Gardiner-Parks. I also use coconut sugar and use less than is called for and tend to use almond milk for at least part of the water it calls for. I am all about increasing nutrition and decreasing processed sugar.
Planning ahead when headed out of town or to a holiday event is key. I also try eat something high protein and healthy before going to a party as well as taking items with me to events, road trips.
Having your own ready made food items and snacks for a road trip, even if you are traveling less than an hour away, can help everyone to avoid the hangry experience which can add stress to the already present stress of eating away from home and going to someone else’s house. Even the anxious excitement of looking forward to a trip or party is a form of stress.
